My thought is that the question as posed by you is leading.
What is the "job description"? Is handling pork or alcohol an essential charaacteristic of the job? Marks and Spencers is not primarly a pork butchers or an off-licence where handing one of those would an essential part of a shop-floor worker's role.
In Ireland, supermarkets are required by law to exempt certain sals staff from selling alcohol on age grounds -- hence the signs saying "Alcohol Can Be Sould At This Checkout" in Tesco. It's a short step to accommodting Muslims with that.
