Breakfast,

Omlette with Smoked salmon and Spinach.


I make the eggs first, then wilt the spinach for a moment and put the salmon on top.

It tastes amazing.

Trout is actually delicious and haven't had it in years!!! I remember fondly one delicious whole trout I ate in Belgium back in 1993, baked in the oven with bit of bacon and I think potatoes and served with a side salad, it was delicious!!! One of the best meals I ever had!

You never actually cook the smoke salmon, right, cos once I made taht mistake and bitterly regretted it!

No just take it out of the fridge first thing, try to let it reach room temprature so the texture and taste is at it's best.
The spinach acts as a "buffer" between the eggs and salmon, so you can have just cooked eggs, that don't heat up the salmon.

Brie mixes quite nicely with the whole affair, or, instead of the smoked fish.

but in that case, put the cheese on one side of the omelette while it's still on the pan and fold the other side over it to melt it a bit.

I like omelettes but not a huge fan, I think this would be nicer with poached eggs.


if using the cheese, then yeah, omelette would be better.

Had a salad this evening, butterhead lettuce, sweet red pepper, tomatoe, grated carrot, grated cheese, grilled salmon fillet some olive oil and red wine vinegar as dressing and cous cous. Was really simple yet very tasty

Poached eggs call for a Bap or toast or some sort of carb, for the yolk to soak into.

If I were trying to turn the salmon and spinach concoction into something with poached eggs, but not use a carb of some description, I'd poach the eggs, and then toss one of them through the spinach with a dash of balsamic vinegar and oil:

the soft yolk, vinegar and oil would make a sort of deconstructed rustic mayonnaise type dressing for the leaves and the heat from the egg would wilt them only slightly. I'd then add the salmon/trout to the mixture, and put the other poached egg on top!

Like a warm breakfast salad.
