A good fried egg can't be beat. Pity so few hotels and cafes do them anymore.

Fried eggs for me gotta be perfect.
Other wise, I'm happy with an omelette.

Perfectly fried you ask?

I prefer them 'medium'; the yolk is not raw, but is still soft i.e., the consistency of custard, with a fully set white.

the "over easy" method is to just fry for a short amount of time both sides on a high heat, cant go wrong and twice the amount of crispy surface to put in your breakfast toasties.

The sunny side up method is to fry as normal, but with a little extra oil, and use a table spoon to baste the top of the egg, until the white has fully set and the yolk is no longer raw.
Perfect accompaniment to Bacon.

If you cook it on a lower temperature for longer you can get a fully cooked yolk, without needing to split it.

I have an egg pan that I use on a really low gas but the yolk won't cook unless I turn it once over easy,what do you think of that greenman,as you are the egg man,have you an egg pan,goo goo ka choo.

Fried bread served with fried egg someone said earlier.
Save some time. Cut an opening in the bread, fry one side, flip add egg and finish cooking. Serve.
