I don't what any of that meant! Can you recommend a yeast I can use for blackberry wine and perchance the name of a shop or website I can buy it in?

Id add more then one pod - as blackberry can be surprisingly intense in pulp and fermentation - a wonderful combination tho!

We will be doing a borage (as its everywehre) and oak blend this weekend with fennel tones - seeing as its all over the local greenlands - PM me if you fancy a bottle swap

So I've about 4 lb's of blackberries now so just have to buy the yeast and pectin this week and a new bucket and I'm ready to go!

I think i'll use sugar. I'm not a big fan of honey tastes in wines.

Depends on how its made and what honey -as I was really surpised how much different types can effect the taste, not always something subtle.

Sugar is an excellent start - harder to get wrong I've gotten away with only racking blackberry one once - once past the first filter it doesnt seem to carry too much pulp

If the wine is a bit cloudy and you want to clear it a bit or are worried that the sediment is enough to throw it all off - you just rack or refilter it to another carboy, allow to stand until things are resettled and keep repeating until you are happy with the outcome.

I prefer racking it over tho - as you can use a tube to take it slowly rather then upsetting the settled sediment and risk some getting through your filter.
